Healthy Cheating: Low Carb Proatmeal Cookies

It is officially diet season, and many of you are crying in your chicken and broccoli with dreams of Grandma’s fresh baked cookies long in the rear view.

Luckily, you can CHEAT CLEAN, get lean and eat cookies all at once!

Listen, I’m an Exercise Science major, a certified personal trainer and an obsessive foodie. I think a lot about how to get my grub on without losing my favorite ab line (the middle one).

Today’s episode of healthy cheating:

Proatmeal healthy cookies!

I adapted this from one of Kodiak Cakes’ own recipes; I replaced some of the butter with a mashed banana and the brown sugar with an erithrytol blend. They came out delish, due largely to Kodiak Cakes! ♥️

Here’s what ya do:

1 1/2 cup Kodiak Cakes Power Cakes Mix in Peanut Butter
1 scoop Ghost Snickerdoodle whey protein
1 cup quick oats
1/3 cup butter
1 mashed banana
1/2 cup Truvia erithrytol blend

1 1/2 teaspoon vanilla extract
1 egg

1. Mix butter, banana, sweetener, vanilla extract and egg until smooth.
2. Blend the quick oats and Kodiak Cakes Power Cakes Mix, then add to the butter mixture.
3. Bake at 350 degrees F for 10 to 15 minutes or until golden brown.
